Cherries spark sweet memories of cooking up tart cherry-apricot jam with my gram in the summer.
You probably know cherries best in a pie or atop a CHERRIES
sundae—but they’re also delicious in cocktails, salads, and sandwiches. This month is the perfect time to enjoy them.
Tart cherries come from
Michigan and Wisconsin because they need cold winters to grow. Sweet cherries come from Oregon
and Washington, where the mild summers help them grow.

The average number of cherries on a cherry tree. To harvest the cherries, growers use a machine that shakes the trunks so that all the fruit falls onto tarps on the ground.

Archaeologists found fossilized cherry pits in the prehistoric caves of Europe and Asia—some of the world’s earliest civilizations. The first written mention of cherries dates back to 300 BC, in a Greek history of plants.

all great for your heart. They also have anti-inflammatory properties that can reduce muscle soreness and symptoms of arthritis.

TRAILS OF CHERRY TREES Swet or tart ?
The dark red cherries sold in the produce section are sweet varieties, like Bing cherries. Use these in any recipe, from no-cook salads and relishes to cobblers. Tart, bright red cherries, such as Morellos, are available frozen, canned, or dried. These are best for stewing or baking.
A HISTORY OF PITTERS
The handheld cherry pitter we use today was invented in the 1920s, but pitters were in use several decades earlier. The first one, invented in the 1860s, was a four-legged device made of iron that was operated with a hand crank.
