SMASHED CHERRY AND BASIL OLD-FASHIONED

8 fresh cherries 10 basil leaves 2 tsp sugar 3–4 dashes bitters
¾ cup bourbon or rye 2 small orange slices
STEP 1 Stem and pit the cherries. Add to a cocktail shaker or pint glass, along with the basil, sugar, and bitters. Using a muddler, mash the basil and cherries until very broken up. STEP 2 To shaker, add the bourbon. Stir to combine. Add ice to 2 old-fashioned glasses. Strain cocktail into glasses. Garnish with the orange slices.
TIP No cherry pitter? Insert a metal straw into the top of the cherry and push down to remove the pit. If you don’t need the cherries to stay intact, cover with a paper towel and gently crush them with a heavy skillet to open, then remove the pits.

DUMP CHERRY COBBLER

Cooking spray 2 lbs fresh cherries, pitted and halved 2 oranges 2 cups boxed yellow cake mix
½ cup (1 stick) unsalted butter 1 cup low-fat milk Vanilla ice cream, for serving (optional)
FARRO SALAD WITH CHERRIES, CUCUMBER, AND MINT

1 cup Nature’s Promise® Organic Italian Pearled Farro ½ cup Nature’s Promise® Organic White Balsamic Vinaigrette
½ cup mint leaves, minced 1 cup fresh cherries, pitted and halved 1 cucumber, finely chopped 1 (4 oz) pkg goat cheese, crumbled
STEP 1 Bring a medium pot of salted water to a boil. Add the farro, bring to a simmer, and then reduce heat to medium-low. Simmer 25–30 min., until farro is cooked through, and drain well. STEP 2 In a large bowl, whisk together the vinaigrette and mint. Season with salt and pepper to taste. STEP 3 Add farro to bowl with dressing, tossing until well coated. To bowl, add the cherries and cucumber. Toss to combine. Add the crumbled goat cheese and gently toss. Season with salt and pepper.

STEP 1 Preheat oven to 350°F. Coat a 9x13- inch baking dish with the cooking spray. Add the cherries, spreading in an even layer, along with the zest of ½ orange and juice of both oranges. STEP 2 Sprinkle the dry cake mix over cherries. Thinly slice the butter and distribute evenly over the surface of the cake mix. Drizzle the milk evenly over butter and cake mix. Bake 40–45 min., until lightly browned. Let cobbler cool slightly and serve with the vanilla ice cream, if desired.
TIP Add the remaining cake mix to cookie dough or pancake or waffle batter.
