1 tbsp vegetable oil 1 onion, chopped 1 cup tomato purée ½ cup honey ½ cup distilled white vinegar


1 tsp garlic powder 1 tsp cumin 2 tsp hot sauce 2 tsp liquid smoke


STEP 1 In an Instant Pot®, heat the oil on the sauté function on high. Add the chopped onion and cook 5–6 min., until edges are browned. STEP 2 Meanwhile, in a small bowl, combine the tomato purée, ½ cup water, honey, and vinegar. Season with salt and pepper. Add the garlic powder, cumin, hot sauce, and liquid smoke. Mix well to combine. STEP 3 Pour mixture into Instant Pot®. Scrape up any brown bits on bottom of pot with a wooden spoon. Seal lid and set to high pressure. Cook 10 min. Let natural release 10 min. STEP 4 In batches in a blender or in Instant Pot® with an immersion blender, purée sauce until smooth. Season with salt and pepper. Transfer to a resealable container and keep in refrigerator for up to 10 days.


TIP Add more or less hot sauce to make your perfect sauce.
