CHICKEN-CHERRY SALAD SANDWICHES

2½ cups rotisserie chicken, shredded
¹/³ cup finely chopped celery
¹/³ cup chopped red apple ¼ cup light mayonnaise ¼ cup nonfat Greek yogurt
2 tbsp chopped fresh parsley 1 tbsp apple cider vinegar ½ cup fresh cherries, pitted Croissants or whole-wheat bread, to serve
STEP 1 In a medium bowl, combine the chicken, celery, apple, mayonnaise, yogurt, parsley, and vinegar. Season with salt and pepper. Mix well to combine. Gently stir in the cherries. STEP 2 When ready to serve, halve croissants, if using. Divide chicken salad among croissant halves or bread slices.
