BBQ SALMON BOWL


PREP TIME 5 MIN. – COOK TIME 5 MIN. READY IN 10 MIN. – SERVINGS 1


- 2 handfuls raw spinach leaves, chopped


- 5 oz cooked salmon* - ½ cup black beans - ½ cup corn - ½ cup quartered cherry tomatoes - ¼ cup diced red onion


- 2 to 3 tbsp barbecue sauce


- 1 to 2 tbsp chopped almonds, optional


- Optional extras: chopped cilantro, chives, scallions and/or lime juice


*I use a skinless salmon filet for this recipe. You can either use leftover cooked salmon or quickly pan-fry or roast a filet.


STEP 1 Add chopped spinach to the bottom of bowl. Place cooked salmon filet on top of spinach, and using a fork, press down and mash the flesh. STEP 2 Add piles of beans, corn, tomatoes and red onion on top. STEP 3 Drizzle on BBQ sauce and mix everything together. Add 1 to 2 teaspoons fresh lime juice, if desired, and salt and pepper to taste. Sprinkle on chopped almonds and fresh herbs.
