The Quick Pickled Vegetables on page 15 are a great way to extend the life of fresh produce. Here’s what to know before you start:
CAN I USE ANY VINEGAR? Many vinegars have a strong flavor that will intensify over time. Stick to neutral distilled white vinegar for this recipe.
HOW LONG UNTIL THE PICKLES ARE READY? Refrigerate your pickles for at least a day before enjoying them. Remember that thin-sliced veggies will absorb the brine more quickly.
HOW LONG CAN I STORE HOMEMADE PICKLES? Store quick pickles in the fridge for up to 3 weeks. Follow manufacturer instructions to process the jars for shelf-stable storage.

Q&A Q: HOW CAN I TELL IF MY WATERMELON IS RIPE?
A: Watermelons don’t ripen off the vine, so you’ll want to select one at the store that’s ready to eat. Look for a watermelon that’s heavy for its size and has a hollow sound when tapped; this is a sign of juiciness. Large watermelons have a light yellow spot, called the field or ground spot, where they rested on the ground as they ripened. The larger the spot, the riper and sweeter the melon.
