GRILLED BALSAMIC CHICKEN WITH PEACHES

1 (4–5 lb) boneless, skinless chicken breasts value pack
¹/³ cup olive oil ¹/³ cup balsamic vinegar
2 tbsp Dijon mustard 6 peaches 1 tbsp chopped chives
STEP 1 Season the chicken with salt and pepper. In a large bowl, whisk together the oil, vinegar, and mustard. Reserve 2 tbsp marinade for later. To bowl, add chicken and turn to coat. Cover bowl with plastic wrap and marinate in the refrigerator for 30 min. or up to overnight. STEP 2 Set grill to medium. Transfer chicken to the grill and discard marinade. Cover chicken and cook, turning once, 15–20 min., until chicken is cooked through. Transfer to a platter. STEP 3 Halve each peach and remove pits. Brush peaches with reserved marinade, then season with salt and pepper. Add peaches to grill. Cook 3–4 min. per side, until lightly charred, turning once. Serve grilled chicken with peaches and garnish with chives to serve.

1½ lbs top round London broil steak 2 green bell peppers 2 red bell peppers 2 heads Bibb or Boston lettuce 1 cup grated provolone cheese

STEP 1 In a large resealable plastic bag, combine 3 tbsp oil, vinegar, Worcestershire sauce, garlic salt, and black pepper. Using a meat mallet or rolling pin, on a cutting board, pound the steak on both sides to tenderize and flatten to an even thickness. Add steak to bag and seal. Marinate at least 30 min. and up to 24 hours. STEP 2 Set grill to medium-high. Halve and remove seeds from the peppers. Brush peppers with remaining 1 tbsp oil and season with salt and pepper. Remove steak from marinade, discarding remaining marinade. Grill steak 4–6 min. per side, or until desired doneness, and grill peppers 4–5 min., until softened. Transfer steak and peppers to cutting board and let meat stand 5–10 min. STEP 3 Thinly slice steak and grilled peppers. Separate the lettuce leaves. Assemble lettuce wraps with steak and peppers, then sprinkle with the provolone cheese.
TIP To melt the provolone, sprinkle the cheese on top of the sliced steak and peppers, then broil for 1–2 min., until the cheese is melted.

1 small zucchini 1 (16 oz) pkg Nature’s Promise® 94% Lean Ground Turkey 2 tbsp chopped fresh dill 2 tbsp mayonnaise 1 tsp finely grated lemon zest ½ tsp dried oregano
1 large red onion Canola oil, as needed 5 whole-wheat burger buns ½ cup Greek yogurt ¼ cup feta cheese crumbles Tomato slices and lettuce leaves, to serve
STEP 1 Trim the zucchini, then grate on the large holes of a box grater. Transfer to a clean dish towel and squeeze out as much liquid as possible. Transfer zucchini to a large bowl. STEP 2 To the bowl, add the turkey, dill, mayonnaise, lemon zest, and dried oregano. Season with salt and pepper and mix until just combined. Shape turkey mixture into 5 (½-inch) patties. Freeze for 10 min. STEP 3 Set grill or grill pan to medium. Peel the onion and cut into ¾-inch-thick rounds. Brush onion slices with oil and season with salt and pepper. STEP 4 Season turkey burgers on both sides with salt and pepper. Place burgers and onions on the grill. Grill 6–7 min. per side, until turkey burgers are cooked through and onions are charred. Transfer both burgers and onions to a cutting board. Grill the burger buns 1 min. per side, until lightly toasted. STEP 5 In a small bowl, combine the Greek yogurt and feta crumbles. Season with salt and pepper. Add burgers and onions to burger buns. Top with the tomato slices, lettuce, and feta sauce.
