Q&A

INGREDIENT 101: Chorizo sausage

Traditional Spanish chorizo is smoked and cured like salami; it can be

sliced and served like other charcuterie meats. Mexican pork chorizo is uncured and requires cooking. You’ll find it in the meat case as loose sausage or fresh links. Use Mexican chorizo for the Chorizo Tacos on savoryonline.com and for the Garlic Shrimp with Chorizo on page 29.

Q: HOW DO I STAY HYDRATED ON HOT DAYS?

A: It’s not just about drinking more water, though you should be sure to have a bottle on you at all times. Fruits like watermelon and pineapple and veggies like cucumber and celery not only contain water, but they also have electrolytes like potassium to help us stay hydrated longer. Try fruit-based smoothies and alcohol-free mocktails made with no-sugar-added juices. Use crunchy veggies as dippers and in colorful chopped salads.

5 ways to use RICE PAPER WRAPPERS

No-cook rice paper wrappers are the base for the California Summer Rolls on page 36. Try these ideas to use the rest of the package.

RICE CRISPS: Shallow fry the dried wrappers until puffed and crisp for snacks and salads. Find the recipe for Chicken Salad with Rice Paper Crisps on savoryonline.com.

LEFTOVER SUMMER ROLLS: Fill softened wrappers with any fresh veggies you have on hand. Add any protein like seared tofu, shrimp, or shredded chicken.

CRISPY DUMPLINGS: Quarter a softened wrapper; add a tablespoon of filling to each quarter and wrap like an envelope. Pan sear in vegetable oil 1–2 min. on both sides until crisp.

RICE NOODLES: Stack 3 rice paper wrappers together and soak 5–10 sec. to soften. On a lightly greased cutting board, cut into thin strips. Add to a soup or stir-fry and cook 3–4 min.

DESSERT ROLLS: Add sliced fruit like strawberries, mango, and banana to softened wrappers and roll up. Dip in yogurt sweetened with honey.
