WHIPPED FETA WITH WATERMELON AND CUCUMBER


PREP TIME 20 MIN. – COOK TIME 0 MIN. READY IN 20 MIN. – SERVINGS 4


7 oz feta cheese block ½ cup nonfat plain Greek yogurt 2 tbsp half-and- half 3 tbsp olive oil, divided


1 English cucumber 6 cups diced seedless watermelon ¼ cup sliced red onion ¼ cup chopped mint leaves


STEP 1 To a food processor, add the feta, yogurt, half-and-half, and 2 tbsp oil. Season with salt and pepper. Pulse 2–3 min., scraping down the sides of the bowl as needed, until the feta is silky smooth. STEP 2 Chop the cucumber. To a medium bowl, add the watermelon, onion, and cucumber. Add remaining 1 tbsp oil and season with salt. Toss with the mint. Spread whipped feta evenly on a serving platter. Top with watermelon and cucumber mixture and serve immediately.


TIP If desired, serve with toasted baguette slices or rolls.
