Cove 220 in 2019 after closing another restaurant, Captains Cove, which they had owned and operated in the Starved Rock area for more than 23 years. “We were ready to leave there,” Irma says. “I am originally from Aurora and we lived in Yorkville. It was a long drive and we just wanted to get a smaller restaurant.” With help from Lynn Dubajic, Yorkville’s consultant on


Economic Development, Irma says they located the vacant restaurant spot on south Bridge Street. “It was what we were looking for,” she says. Paradise Cove 220 was born. Te name was a hybrid


created from their Ottawa restaurant’s name, and another restaurant, Paradise Grill, they currently also own in Marco Island, Florida. Te Yorkville restaurant carries on a tradition of featuring seafood and specialty drinks. “I have fish, and an extensive shrimp menu,” Irma says.


“We make our own coconut shrimp.” In addition to seafood, Irma says they also feature a


potato-crusted chicken sandwich, a buffalo chicken grilled cheese sandwich and hand-battered jumbo mushrooms. Irma says she also is a certified mixologist. One of her


favorite mixed drinks is “No Shoes, No Shirt,” a raspberry coconut mango rum drink with pineaaple and orange juice and a touch of cranberry juice. She also recommends Donna’s Tequila Royale. After having closed the restaurant, and then opened it only for limited hours because of the Pandemic, Irma says they are looking forward to opening up again in May and they are doing carry out orders. Despite the pandemic, she says the two years in Yorkville have been amazing. “Everyone has helped us a lot,” she says. “I think they’ve


done a great job with the Covid. I think everyone does a fantastic job of supporting everybody in the Chamber. It’s helped us tremendously.”
