Pork Hock braised with Star Anise


Ian Senior of Keelings Fish Bar, Racecommon Road Barnsley cooks slow-braised Thai street food, perfect to spice up the cold autumn nights.


Serves 4


INGREDIENTS: 2 pork hocks, washed Sunflower oil for frying 2 coriander roots or stems, chopped (leaves saved for later) Large pinch of salt 5 garlic cloves, peeled 10 white peppercorns 2 star anise


1 cinnamon stick


2 tbsp of palm or brown sugar 3 tbsp fish sauce Water to cover the hocks 2 tbsp gluten-free oyster sauce 2 tbsp gluten-free soy sauce 2cm (1inch) ginger, peeled and bruised


Coriander chilli sauce Handful coriander leaves (from above)


5 red chillies, chopped finely 2 garlic cloves, peeled 1 shallot peeled, chopped 1 tbsp fish sauce 1 tbsp lime juice ½ tsp sugar


METHOD:


• Bring a large pan of salted water to the boil and place both hocks in for five minutes to clean. Drain, rinse and pat dry.


• In a large saucepan, add the sunflower oil and brown each hock, turning as you go then set aside.


• Using a mortar and pestle, pound the coriander roots/stems, salt, garlic, and peppercorns into a paste.


• Heat two tablespoons of oil in a large pot and fry the paste, star anise and cinnamon stick until light golden and fragrant. Season with sugar and fish sauce.


• Add the hocks and cover with water before adding the oyster sauce and soy sauce. Bring to the boil then reduce the heat and simmer for two hours or until the hocks are just cooked, skimming often.


• Remove from the heat, add the ginger and garlic to the pot and rest for 30 minutes to allow the flavours to blend.


For the sauce: Add all the ingredients to a blender and whizz in short bursts until all the ingredients are smooth then tip into a container and allow to sit for 30 minutes.


Serve the braised meat with rice and the hot coriander sauce.
