FOOD & ENTERTAINMENT Watermelon


Watermelon is the favourite melon of the summer, so make yourself a little cocktail and sit back and enjoy.


Makes 3 drinks in 10 minutes


Ingredients


• 700g seedless watermelon, cubed


• Pinch of rock salt


• 6 tablespoons fresh juice from 5 to 6 limes


• 40 ml Elderflower liqueur • 170 ml tequila • Mint garnish (optional)


Directions


1. Add all ingredients to a blender and puree until smooth. Strain through a fine-mesh sieve into a pitcher/jug


2. Mixture can be served immediately or sealed and chilled for up to five hours in the refrigerator. When ready to serve, fill three serving glasses with ice, re-stir mixture, and divide evenly between glasses. Serve immediately, finish with a sprig of mint.
