Elevated high up on Wickersley’s dining scene, 450 Above takes your culinary experience to another level with their vibrant and inspiring fine dining menu.
Headed up by seasoned chef, Simon Ayres, the kitchen is inscribed with innovation and commitment, with Simon bringing a new creative concept to 450 Above since taking over as head chef last year.

From finely crafting decadent desserts to making accompaniments such as wine-preserved eggs or vegan tapioca prawn crackers that take three days to make; each component is created with passion and thought to concoct memorable dishes.
Utilising old fashioned, overlooked cuts of meat, Simon’s ever-changing menu brings 450 different possibilities for meat that would otherwise be left on the butcher’s block.
Basting in a natural flair for flavour, Simon brings influences from his celebrated 20 year career which has seen him take the lead at high profile establishments such as The Milestone in Sheffield where his team beat 12,000 restaurants to win Gordon Ramsay’s Best British Restaurant. Their signature dish is a pork and apple match made in heaven that has become a real crowd pleaser. Using three types of pork, slow roasted belly pork is joined by pressed tongue and bacon cheek crumble. Added to this are the sweet flavours of mustard apple compote, calvados sauce and parsnip puree.
A menu mainstay, their chicken dish is prepared intensively over 24 hours to create a moist, flavour infused dish with taste of a southern barbecue. After 12 hours soaking in hickory smoked brine,
the chicken is then flame cooked over hot coals before being slow cooked in a water bath for almost two hours. This is served with sweet potato and sour cream mash, bacon crisp, pan fried plums and deep fried beetroot.
Baking fresh focaccia bread daily, whipping up their own Henderson’s Relish butter, and even infusing flavours into the meat to marinate them from the inside out; by handcrafting each dish with time, effort and patience, Simon and his team continue to go above and beyond to bring a fine dining experience to Wickersley.
