Kent & Fraser is introducing its award winning Lemon Butter Shortbread to the café sector

All Mrs Crimble's products are gluten-free and wheat-free, but its Choc Macaroons and other lines are popular with everyone, whether they have dietary requirements or not. In many cases the ingredients are more nutritious and flavoursome than the wheat flour they are replacing. Managing director Jeremy Woods first became aware of Mrs Crimble's - a small bakery company that happened to make two gluten-free products - because, at the time, his daughter had been put on a gluten-free diet. He spotted the potential for developing Mrs Crimble's Free From range, took over the business in 2003, and it's now claimed to be the UK's leading gluten-free brand.

helped her. We went out and bought all the gluten-free biscuits and cookies we could find and they were very disappointing - an insult, really," says John. "We're selling tasty and healthy boxed biscuits to shops and are now developing a range for the café market." Varieties include Lemon Butter Shortbread, which won the Great Taste Awards Gold Star last year; Cranberry & Maple - which is like an oat biscuit without oats; Orange & Chocolate; and Dark Chocolate with Nut. "The trend is for 'free-from' products now. It's a turn-off in

major coffee houses when there's just one 'free-from' item or none at all," says John. If you're looking for something a little more out of the

ordinary, read on. Single Source, the single-serve portions supplier, recently joined the PortionPack Europe group and is working with it to launch a new range of continental biscuits and chocolates into the UK foodservice sector. For example, there will be a caramel wafer known in its native Holland as stroopwafel. It's a large 9cm diameter biscuit individually foil wrapped: the giant wafers can be placed on top of a steaming mug of coffee to warm and soften. The biscuits are packed 36 to a printed display box for counters. And make sure you're in on the ground floor of the latest craze to hit these shores from across the pond: the Whoopie Pie is tipped to topple the cupcake from its position as must-have sweet treat. More Food has unveiled its version of the whoopie pie this summer. These pies - originally called 'Hucklebucks' - were first baked by Amish communities in the USA. When the farmers found them in their lunch boxes they supposedly cried "Whoopie - sweet!" Fifties retro in style, the 'pie' consists of a burger-shape sponge sandwich with butter icing in the middle, and can be plain or decorated with icing and sprinkles. More Food chief executive Caron Howe says: "It's similar to the cupcake in that it appeals to all ages. It's important for coffee shops to offer variety to their customers, as it's the choice factor that draws people to any establishment."
