1 stick butter 1/2 c. Crisco 4 eggs, separated 1 tsp. vanilla


2 c. sugar 2 c. fl our


1 c. buttermilk Icing:


1 (8-oz.) block cream cheese 1 stick butter 1 1/2 lbs. powdered sugar


1 tsp. vanilla Milk, to desired consistency 1 c. coconut


1 c. chopped pecans


Mix butter and cream cheese together. Add powdered sugar, vanilla and enough milk for desired consistency. Stir in coconut and pecans. Spread icing between layers to assemble cake. 1 1/2 tsp. soda 1-2 c. pecans 2 c. coconut


Beat egg whites. Set aside. Mix butter, Crisco, egg yolks, vanilla and sugar. Mix in fl our, buttermilk and soda. Lastly add pecans mixed with coconut. Fold in egg whites. Pour into 3 greased and fl oured pans. Bake at 350° for 22-25 minutes.
