culture. Te idea behind Redcliff


Quarter is to take this a stage further, by creating a brand new and inspiring food quarter.

ooking beyond the traditional bricks and mortar of a development and focussing upon food came


about because developer Change Real Estate wanted Redcliff Quarter to be a vibrant urban neighbourhood. With that in mind they have sought


input from Josh Eggleton, chef-proprietor of Te Pony & Trap at Chew Valley, and restaurateur and chef Mark Hix. Josh explains: “My vision is for a 20,000 sq ft European-style food hall and market that will form the central hub of Redcliff Quarter. “Here, a host of local and regional


food and drink producers will not only operate top quality market stalls, but will also offer informal street food served at large, central tables.” Te proposed food hall at Redcliff


Quarter is the latest foodie enterprise involving Josh, who started working in his local fish and chip shop at the age of 15 and went on to become one of the youngest chefs to be awarded a Michelin star in 2011. In addition to running Te Pony &


Trap with his sister Holly and being co- founder of Salt & Malt by Chew Valley Lake, Josh is co-founder of Eat Drink Bristol Fashion, a foodie tipi village that is set up annually in Bristol city centre. He is also a director of Yurt Lush - a cafe, bar and venue made of three interlinked Mongolian-style tents near Temple Meads Station. Josh says of his idea for a food hall
