Female Focus Courgettes


Ingredients 3 courgettes


1 kilo pork sausage, chopped 1 cup dry bread crumbs 1 clove garlic, minced


Spaghetti sauce – see recipe below ½ cup grated Parmesan cheese ½ cup shredded mozzarella cheese


Directions


Preheat oven to 175ºC. Trim stems from courgettes and slice lengthwise. Scoop out seeds and put in bowl. Mix seeds with sausage, garlic, bread crumbs, and parmesan cheese. Stuff courgettes with sausage mixture and place in 9x13 inch baking pan. Pour sauce over courgettes and cover pan with foil. Bake in preheated oven for 45 minutes, or until sausage is cooked. Remove foil and cover with mozzarella cheese. Cook until cheese is melted.


To make the spaghetti sauce you will need: Ingredients


¼ cup olive oil 1 onion, chopped


2 garlic cloves, minced – (I like to use more) 2 kilo fresh tomatoes, peeled and chopped 1 tablespoon white sugar 1 tablespoon dried basil 1 tablespoon dried parsley 1 teaspoon salt


Directions


Heat olive oil in a large pan over medium heat.


Add onion and garlic;


cook and stir until onion is


translucent, about 5 minutes. Add tomatoes, sugar, basil, parsley, and salt. Bring to a boil. Reduce heat and simmer, stirring occasionally, until sauce thickens, 1 to 2 hours.
