This is one of the most exciting times of the year if you ask me. Fresh, British asparagus is very hard to beat, but choosing from so many great recipes has been tricky. Most of this issue’s recipes are nice and light though so I don’t feel too overindulgent with my choices.
To start
PAGE 20 – BARBECUED ASPARAGUS, ROCKET, GOAT’S CHEESE AND PINE NUT SALAD
Barbecuing asparagus gives it a lovely smoky edge that works perfectly with the creamy goat’s cheese. Add
crunchy toasted pine nuts and this is pretty near perfection for me.

PAGE 26 – KEDGEREE WITH CRISPY DUCK EGG AND WATERCRESS
Kedgeree is one of my favourite dishes and I haven’t cooked a duck egg like this before so I’m looking forward to giving it a go. I wonder if I can get hold of smoked pollock…
For pud PAGE 24 – MANGO AND RASPBERRY TRIFLES
You can’t really beat a simple trifl e and the sweet mango and sharp raspberries work perfectly together in this ensemble. I will be trying it with all sorts of berries when the season is upon us!
