There are few gadgets that we couldn’t be without - simply to ensure each dish is consistent for all of our guests. Our KitchenAid mixers are a good example. They are in constant use in our restaurants. They’re used to prepare elements of all dishes from start to fi nish. From kneading the bread and whipping up some light and creamy smoked cods roe to start the meal, to the pates and terrines of the starters. We use them for mixing components of our main courses, and they’re essential for baking and creating desserts, crumbles and nut mixtures. For us, tea is not just a drink, it is the leaf, the infusion, the preparation and the stories that accompany it. For us tea without the story simply lacks soul. As you read this Michelle will be in China searching for new teas and checking up on the teas we currently source. Back in October Rob was in Taiwan and on our blog you will fi nd stories of how we personally source our fi ne teas from around the world. If you visit our Tea House or see us out and about you will experience the great care we take to prepare our teas in the way they have been shared with us across the world. We make a few simplifi cations here and there so that for our customers great tea can become an everyday pleasure but you will come to know the various tools of the trade, the gaiwan, kyusu, gong fu, yixing and as we prepare your tea we will be pleased to share the stories of some of our tea heroes: Mr Banerjee from the pioneering Bio-dynamic Makhaibari Estate in Darjeeling, Mr Fernando a world renowned tea expert who despite running a mul- tinational tea company out of Sri Lanka took time to introduce us to the wonderful Imboolypitiya Estate where we source our Ceylon..... these simple instruments and stories make our personally sourced and selected teas taste even better. So let us end with an invitation - to visit the Tea House and sample our newly arrived Taiwanese Oriental Beauty, Alishan, Yilan and Brandy Oolongs personally sourced in October. Trust us - it will be the start of an amazing adventure.
