Coffee butter icing


 125g butter, softened  200g icing sugar  3 tsp finely ground strong espresso coffee (powder-fine)


1 Put the butter into amedium bowl and, using a hand-held


electricwhisk, creamuntil light and fluffy.


2 Sift in the icing sugar and coffee powder andwhisk again for 5–7minutes, or until the mixture returns to a light and fluffy consistency and the coffee has dissolved into the icing.

Try swapping the colour and butter icing flavour to tailor the macaroons tomake a personalized gift.

Spice up celebrations with festive flavours


ORANGE LIQUEUR


While sloe gin andmost other fruit infusions take months to develop their flavour, orange liqueur is ready in a day,making it perfect for lastminute homemade gifts.Orange liqueurs are good on their own butmuch better in a long drink. Pour a shot or two of the liqueur into a glass, pour on fresh orange juice, stir and add crushed ice.


Infusion time 1–7 days Makes about 350ml


 1 orange, unwaxed and as shiny and fresh as possible  1 tbsp sugar  350ml vodka


1 Use a potato peeler to slice off the zest of an orange, pop it into a 350ml Kilner jar, sprinkle on the sugar and top upwith vodka.


Close the lid and shake until the sugar has dissolved. Place in a dark cupboard and shake once a day.


2 Remove the peel after nomore than aweek as the liqueur can become cloudy. If youwant to drink it immediately then it can be ready in half an hour if youwarmthe jar in hotwater.


Variation


Lemon liqueur. Simply replace the orangewith lemon zest. Thiswill findmany uses as a cocktail ingredient or simplywith soda, lemon juice and crushed ice as an alcoholic lemonade.
