HOMEMADE BUTTER
Give leftover creama newlease of life – turn it into butter! Makes approx. 280g
600ml double cream Quarter tsp salt (optional) Ice coldwater
1 Put the creamand salt (if using) into a food processor and blend until it thickens and separates into butter and buttermilk.
2 Add 4-5 tbsp ice-coldwater and continue to process until the butter starts to forminto small lumps.
3 Tip themixture into a sieve and set over a bowl to save the buttermilk. This can be chilled for up to two days.
4 Put the butter onto a plate and presswith the back of a fork to squeeze out all the excess buttermilk. Gradually itwill come together into a ballwith no signs of any liquid seeping out.
5 Shape into blocks or balls or press into small pots, cover and chill until needed. Thiswill keep in the fridge for up to five days.

I’mwriting thesewords froma cottage in storm tossed Falmouth, taking a familyweek offwhilst restingmy post operative shoulder. It’s a time for reflection.
Every farming year is a busy one and it’s easy to get bogged down in the nitty gritty and to lose sight of the bigger picture. I truly love farming, being a part of the landscape is special and I hope thatmy effortswill help to protect and promote it for the generations ahead ofme. Yes Iwork hard tomake a living in the here and now, but I also feel privileged to be part of a timeless tradition, carrying the baton forward. Farming is fundamental to thewell being of all of uswho are lucky enough to live on our little island and that means all of us farmers have been given a special responsibility whichwe take very seriously.
The clocks have gone back, the nights are drawing in, and it might look as if the land has gone to sleep, butMother Nature is always busy.Our rapeseed for example has settled in, the hedgerows are full ofwildlife stocking up on natures’bounty, and even in the barren ploughed fields, an army ofmini beasts is aerating and improving the ground. Then,when the lights go back on Spring bursts out
again.Magic.

Talking ofmagic, it’s nearly Christmas. I love Christmas, it’s one of the fewtimeswhen I switch off, relax and spend timewith the
family.More importantly I love a Christmas feast.Whether it’s Turkey, beef or game, I don’tmind as long as there are piles of hot roasties. For golden, crispy and fluffy roast potatoes you need two ingredients; proper potatoes likeMaris Piper, and generous use of Extra virgin Fussels rapeseed oil. Personally I make sure there are toomany so there are some left for bubble and squeak on Boxing day, it’s the only thing I cookwell!
