6 Use a pallet knife to spread over themeringue to 2-3cmthick. Bake at 110C for 2-2.5 hours, depending on your oven.


7 Turn the oven off, open the door slightly and let the meringue cool slowly in the oven. Transfer to an airtight container until needed.


8Whisk the creamto soft peaks. Chop the clementines into small pieces. Break themeringue into small pieces andmix in a bowlwith the creamand clementines. Swirl through a fewspoonfuls of the curd.
