hristmas pudding dates back as far asmedieval England, when the Roman Catholic Church decreed that the puddingmust bemade on the


25th Sunday after Trinity (8weeks after Easter Sunday). The decree also stated that the puddingmust be preparedwith 13 ingredients to represent Christ and the 12 apostles, and that every familymember must stir it fromeast towest to honour the threewisemen on their journey in that direction. To this day, the tradition of Stir-up Sunday


remains and this year it falls on Sunday 24th November. If you aremaking your own Christmas pudding, that is the day to gather the family together to stir up some tradition. If youwant to be evenmore traditional you maywish to drop a coin into the batter (for wealth) or aminiature horse shoe (for luck), justmake sure youwarn your guests, to avoid any unnecessary trips to the dentist! CHRISTMAS PUDDING WITH WEST COUNTRY ALE The traditional Puddings&Pies recipe.


Stage 1  76g currants  90g raisins  90g sultanas  1g (pinch) ground cinnamon  1g (pinch) ground nutmeg


 1g (pinch) groundmixed spice  40mlWest Country ale  10ml Somerset brandy  5ml rum  5ml sherry  16ml orange juice  12ml Lemon juice


Stage 2  90ml egg  60ml vegetable Suet  60gwheat flour  65g dark brown sugar  25gmixed peel  30g apple diced  30g bread crumbs  20g carrot grated  10g glace cherries  1g (pinch) salt


SERVES 4-5
