Lightly butter a baking tray and place the herring fi llets on it skin side down.
Brush the fi llets with a little melted butter and sprinkle with the oatmeal. Place under the grill or in a hot oven at 170˚C to cook for 5 minutes.
While the fi llets are cooking, melt the butter in a thick based frying pan. Add the cream, wholegrain mustard, chives and fi sh stock and boil together until the sauce reduces and thickens.
Season and serve with crushed new potatoes or baked potato and a fresh green salad.
