INGREDIENTS for 12 TASTERS or 4 portions • 12 langoustines
• 2 tbl T ai fi sh sauce • 2 tbl light soy sauce • 1 tbl sugar
• 1 whole chilli fi nely chopped • 1 clove garlic fi nely chopped • juice of 2 limes
• 2tbl chopped fresh coriander • black pepper and sea salt fl akes to season • sprig of coriander and a lime wedge to serve
METHOD
1. Poach the langoustines in boiling salted water for 4 minutes. 2. Meanwhile heat the fi sh sauce, soy sauce and the sugar together until dissolved then add the chopped chilli, garlic and lime juice. 3. Drain the langoustines and pour the warm sauce mixture over them while hot.
4. Season to taste with the black pepper and sea salt fl akes. 5. Sprinkle with chopped coriander. 6. Refrigerate until cool.
7. Serve garnished with lime wedge and a sprig of coriander.
