3 handfuls of fresh basil (you could also use rocket or parsley instead) 1 handful of pine nuts (you can use walnuts, almonds or cashews for a change of flavour)
1 handful grated parmesan cheese Extra virgin olive oil Salt and pepper
Squeeze of lemon juice (optional) Method
1. Pulse garlic, basil, pine nuts and salt in a food processor 2. Add half the parmesan cheese 3. Season with salt and pepper 4. Empty mixture into a bowl 5. Add olive oil slowly stirring constantly until you get the required consistency (usually a thick paste but you may make it looser if you wish to use it as a salad dressing or sauce). 6. Add lemon juice for some added zest.
Date and Nut Truffles
8 fresh dates (or half and half dates and figs), stoned 100g ground almonds 2 tsp carob/ cocoa powder
Finely grated rind and freshly squeezed juice of ½ orange 8 Brazil nuts or 8 walnuts halves
1-2 tbsp chopped mixed nuts (to help thicken mixture) 1tbsp Cointreau or Gran Marnier (optional)
Method 1. Place the dates, almonds, carob powder, orange rind and juice in a food processor and blend until the mixture forms a stiff ball - adding orange liqueur or more orange juice if necessary to help bring the mixture together. 2. Remove blade and roll date mixture into balls. Place in truffle cases or roll into balls and fill each with a Brazil nut. 3. Cover and keep in the fridge for up to 3 days.
