Nutritious edamame soybeans can be substituted for green peas or lima beans in any recipe. In Ja- pan they are traditionally prepared by boiling the pods in salted water. YARD-LONG BEANS


Also called Asparagus beans, the culture of yard-long beans is similar to pole beans. The long, slender pods are frequently seen in Asian cuisine and are excellent stir-fried, sauteed or deep fried. Boiling is not recom- mended as pods will become water-logged and tasteless. A packet is 100 seeds.
