impossibly fi ne white sand, with full beach service available. T e swimming pool overlooking T e Boathouse Bar & Grill proved equally luxurious. Draped across chic four-poster beds and soft white towels, we settled in for some late afternoon sunshine. Every so often the pool butler would off er us cold towels, chilled water or refreshing strawberry ice cream. It made for a heavenly experience. T e elegantly appointed Iridium Spa, in

which we both enjoyed sumptuous signature spa treatments, provided a seductively absorbing experience, in-keeping with the tone of the rest of this wonderful resort. T ere are numerous, exquisite dining options at the St. Regis and in the fi rst instance we received a special invitation to dine at the chef ’s table in the kitchen of Le Manoir. T e fusion of Mauritian and classic French cooking was prepared in front of our eyes and the setting was a little more elegant than you would expect from a kitchen table. White table cloths and traditional Mauritian fl owers were laid out in preparation, in keeping with the colonial style of the dining room. We enjoyed an endless array of speciality dishes to satisfy the choosiest of palates, fi nished with an expertly crafted souffl é. We drew our evening to a close with coff ees and liqueurs in the refi ned surroundings of T e 1904 Bar, named to commemorate the building of the fi rst St. Regis in New York by John Jacob Astor IV, one of the wealthiest men in America at the time. He would certainly have approved of the glamorous ambience the St. Regis Mauritius exudes. Another unforgettable dining experience was provided by the unapologetically South

East Asian inspired “Floating Market”, complete with wooden shutters and lit, fl oating lanterns, fully evocative of a regional street scene. T is venue proved a particular favourite for my husband, Phil, who noted the crispy duck salad starter as an outstanding dish. To round off a perfect day we meandered along the paradise beach, bathed in the moonlight, before curling up to a movie in our dreamy junior suite. After a splendid breakfast of fresh fruits and pastries, served on the veranda of Le Manoir, Phil took advantage of a boat trip on the stunning turquoise lagoon, one of the many water excursions available through the resort. Treated to a handsome picnic and some light refreshments, he spent a good two hours exploring the magnifi cent waters, guided by the captain for the day. We really were loathe to leave this decadent

haven, but we were still able to enjoy one more enchanting evening, with pre-dinner aperitifs in T e 1904 Bar, before a sumptuous farewell meal of Tandoori specialities in the Simply India restaurant.
