This live music venue on the Lariat Loop started serving burgers 11 years ago—first five choices, then 10, and now 30—each named after a song by the owner’s favorite band, Widespread Panic. AAA Colorado members (and EnCompass readers) Gary Mitchell and his wife Meghan see the peren- nially touring rock group every chance they get—so far, 115 times for Gary and 80 for Meghan. Evidence of their devo- tion is limited to just one wall of the bar, which otherwise looks like other Colorado mountain biker bars. But few biker bars anywhere offer the kind of menu you
find at Cactus Jack’s. Among the choices is the Sandbox, a 1/3-pound “local favorite” with white cheddar cheese curds and bacon. I order one on a Thursday, when the grill offers an $8 burger-and-beer deal (I choose Diet Coke). Gary was a Cactus Jack bartender for three years before
buying the joint, an experience that raised his awareness of traffic safety. He works with Drive Smart Evergreen and the
Colorado Department of Transportation in offering Smart Box, a pod where motorcyclists who’ve had too much to drink can securely store their rides. At the bar, a sign noti- fies designated drivers that they get free sodas. –Tom Hess

The owner says the H is a secret, or can mean anything you want—hand-cut, Happy Hour, hungry, humongous—but I think the important letter is N, the symbol for nitrogen, which the restaurant uses in liquid form to cool its milk- shakes. My chocolate treat is delivered with steam rising, the surface bubbling, as the liquid nitro interacts with the sweet milky fluid. After a minute, the fireworks over, the spoon is firmly lodged in the frozen surface of the shake—a very cool presentation of a classic.
