My wife and I were eager to try this new addition to the Steamboat base area, which offers a pleasant dash of friendly for- mality at a ski area better known for its cowboy casualness. At nearly $50 each, the Truffle Pig's Big Pig Burger may be the most expensive in the state. “We add seared foie gras, black truffle aioli and shaved Périgord truffles,” explains general manager Josh Eckhaus. For those with skinnier wal-
lets (or when truffles are out of season), there’s the Truffle Pig Bacon Burger for less than a third the Big Pig’s portly price. It comes with slices of Nueske’s bacon in place of truffles and foie gras, and regular fries instead of the truffle- imparted version.
