Located in the Park Hyatt Beaver Creek, the 8100 Mountainside Bar & Grill features indoor seating, but I always head straight for the outdoor patio where heaters warm winter air and canopies shade the summer sun. I fi nd the family-friendly atmosphere refi ned but relaxed, and the service is typically attentive but unrushed. The cheeseburger here is called the Never Ever—“never any preservatives or additives and never frozen,” explains sous chef Nathan Troop. The toasted poppy- and sesame-seed bun comes coated with a house-
made roasted garlic aioli, and the corpulent patty is topped with white cheddar, Bibb lettuce and a slice of tomato. Crisp strips of house-cured jalapeño bacon add a delightful twinge of tanginess.
