Pumpkin Swirl Cheesecake Bars


For the cheesecake: 3 . . . . . . . . . . . . . . . . . . .8 oz boxes cream cheese, softened 1 cup. . . . . . . . . . . . . . . .sugar 3 . . . . . . . . . . . . . . . . . . .eggs 8 oz . . . . . . . . . . . . . . . . .sour cream 1 T . . . . . . . . . . . . . . . . .vanilla 2 T. . . . . . . . . . . . . . . . . .fl our


Preheat the oven to 325 degrees. Line a 9 x 13 inch baking pan with foil or parchment paper, leaving an inch overhang on all sides. For the pumpkin topping, add all the topping ingredients to a small saucepan. Bring the mixture to a boil and then reduce the heat to low. Sim- mer for about 15 minutes, stirring frequently, until the sauce has reduced. Allow the topping to cool. To make the crust, toast the nuts in a dry skillet over medium-high heat, shaking the skillet often. Watch the


skillet carefully so the nuts don’t burn. When the nuts start to brown, place them in a food processor or blender. Add the graham crackers, the melted butter and brown sugar and pulse until the crackers and nuts are fi nely ground. Press the mixture fi rmly into the prepared pan. For the cheesecake, add the cream cheese and sugar to a large bowl. Beat with an electric mixer on low until combined. Add the eggs one at a time, mixing after each addition. Finally, add the sour cream, vanilla and fl our and mix until combined. Pour the fi lling over the crust. Drop teaspoons of pumpkin topping on top of the cheesecake. To create swirls, stick a knife into the pump- kin topping and move it in a circular motion. Bake for 40 minutes. Allow the cheesecake to cool completely (for 3-4 hours) before removing it from the pan. Once it’s cooled, use the foil or parchment to lift the cheesecake out of the


pan. Cut into bars using a wet knife if needed. OL
