FOOD & DRINK BAGEL TOPPINGS
PILE IT HIGH Spread a layer of mustard onto a toasted bagel, add
mashed avocado and sliced boiled egg. Add coils of wafer thin pastrami then sprinkle with sea salt flakes and black pepper.
THE SOPHISTICATED Thinly slice 100g of fresh raw salmon fillet and 50g of cantaloupe melon. Put on a plate, drizzle over 20ml of sherry vinegar, then leave for 20 minutes. Spread cream cheese on a toasted bagel, top with the salmon and melon, add chopped cornichons and a sprinkling of sea salt flakes.
FIERY GREEK Tirokafteri is a Greek dip and it's perfect as a bagel topping. Mix 1 crushed garlic clove, 1/2 finely chopped fresh chilli, 200g crumbled feta, 5 tbsp natural yoghurt, 3 tbsp olive oil and a handful of chopped dill.
GO NUTTY Slather crunchy peanut butter onto a slightly toasted bagel, then add slices of banana and a drizzle of dark honey or maple syrup.

Chicory leaves Crunchy and mildly bitter, also known as endive are gorgeous raw in salads or seared on the griddle. They're also highly nutritious. Chicory is packed with fibre and vitamins K and A, folate and manganese.

If you were not a chef what would you be doing? A musician. My favourite instrument is the piano.
Favourite kitchen gadget? A dehydrator, because it is a great tool to be able to create different textures for various dishes.

Slice the chorizo and cook in a frying pan until the oils are released. Slice the peppers, add to the pan with the tomatoes, season and cook until warmed through
Make two spaces in the pan and crack an egg into each one. Cover with a lid and simmer for 5 mins until the eggs are cooked
under the grill

What is your most memorable food moment? The first time eating spaghetti Vongole off the coast of Italy, in a small family owned restaurant.

Who is your favourite provisioner and why? We Supply Yachts. You can always get what you need quickly all over the world.
Most outrageous guest request? Asking for 32 Indian dishes to be made at 2am in just 30 minutes. The guests arrived back from a party on-shore with 30+ additional guests and thought it would be a nice idea to have a little Indian banquet - and only 2 chefs in galley.

SWAP SHOP SWAP: FARRO FOR WHITE RICE
Unfortunately, white rice is not among the healthiest grains. In fact, it offers approximately zero nutritional value. A quarter-cup serving of farro, a high-protein, high-fibre ancient whole-grain wheat, which looks similar to barley on the other hand, has seven grams of heart-healthy fibre and seven grammes of protein. You'll love its deliciously nutty, toasty taste, too.
