INGREDIENTS Serves 2 500g free-range


chicken fillet


2 large slices of stale bread Basil, oil, a sprig of parsley


METHOD


• Chop the meat. Add bread (softened in water), finely chopped parsley, raisins, pine nuts and a few basil leaves, season and stand for 30 minutes


• Place the dough in the centre of the lemon leaf, roll up and close with a toothpick, bake in a preheated oven at 160°C for 15 minutes

Sauté the raw broccoli tops with garlic, oil and chilli pepper


Serve the leaves in the middle of the plate, beside the sautéed broccoli
