FOOD & DRINK WAYS WITH LAVENDER


An easy to grow herb and so much more than just a fragrant herb


FRESH LAVENDER Use fresh heads and stems in salads


or to decorate cakes and drinks. LAVENDER ESSENCE


Sold as essential oil or extract (make sure it's marked culinary). Use hot for anything baked or heated and cold for flavouring ice creams, drinks and syrups. Make sure you use sparingly.


LAVENDER HONEY


Try drizzling over salty cheese. REPLACE


Vanilla with lavender essence for a creme brûlée, then serve with a sharp apricot compote.


ICE CREAM


Maccarate strawberries in sweet wine, lemon zest , a little sugar and a few drops of lavender essence for 1-2 hours. Scatter over dried lavender flowers and serve over vanilla ice cream.

COOKS TIP GO FOR GRATIN IT'S ALL THE RAGE


Whizz up potato peelings with nuts and seasonings to make a crunchy topping for gratins or fish in place of breadcrumbs.


Caviar bumps — in which a dollop of the fish roe is eaten off the back of one’s hand in a salty, sensual slurp. Somehow this has become a decadent and naughty way to consume the pricey delicacy.

Serves 4


Tip the flour into a bowl, drizzle in 2 tbsp water and mix to form a thick batter. Season with plenty of salt and freshly ground black pepper, then mix in the courgettes.


Pour oil into a pan until it is about 4cm deep, heat well and lower the battered courgettes into the hot oil and fry, turning after 1 min using a slotted spoon, for 5-6 mins until golden. Then scatter with the Parmesan before serving.

What is your favourite dish to cook? I'm Italian so my preferred dish is pasta and I always create it with a different sauce like linguine with nduja, pistachio and cherry tomato (That is my creation…)

I've visited a lot of countries and found interesting food…but Italy is really difficult to beat for the food - what did you expect me to say?!

Seabass with creamed peas, fried paglia carrots and lemon sauce.


Who is your favourite provisioner? Around the world the best provisions I had (Italy not


counted…) was Antigua, fresh, on time and delivered with a smile!


What is your most memorable food moment?


After the crossing one guest stood up and said in front of all the crew and guests, "I would like to applaud a person who has gone through a lot on the boat, who worked with bad weather, rain, wind, even pirates onboard on the first night (true story in The Dominican Republic). He never gives up and continues to give us a lot of pleasure during his first time on a yacht….Thanks Andrea."


Everybody clapped and I started to get emotional and cry like a baby….
