SEA BASS SERVED WITH COUS COUS AND SAFFRON VINAIGRETTE

CHEF Neal Waterfield and his wife, Joanne, still get very excited about the producte and food they sell in their Italian delicatessan “Waterfields” deli, the pur­ veyor of fine foods in Whalley Road, Clitheroe, just on the comer of Greenacre Street. They like to know where each product


comes from and how it started out. Neal particularly explaines “If you buy good food, do very little to it, it will come out good. ’’The fresh pasta dishes which Neal and Joanne make each day vary according to what customers like, they also make home-made quiches and sandwiches. ■

Method for Escabesche Place all Ingredients into a pan and bring to boil, leave to simmer for five min­


utes.- Wrap fillet of sea bass in Serrano ham

on either side. Place in a tray and pour over


Escabesche liquid and leave to cool for 12 hours in the fridge. The fish can be served hot or cold, preferably cold.


Neal work^ as a chef for 14 years before


he and his wife Joanne decided to open their own delicatessan. Neal started his career at Northcote Manor, Langho, as an apprentice working his way through the ranks. Joanne also worked at Northcote Manor. However, Neal decided to try the big city and travelled to London where he started again on the bottom rung of the ladder in the kitchen of an Italian restau­ rant called “Zafferano’s" eventually work­ ing his way up to sous chef. After two years he moved to the famous


restaurant L’Escargo for another two years before moving back to the north west to the Angel at Hetton, followed by |he Devonshire Arms, Bolton Abbey. Eventually he decided he would like to


be more involved in the industry and took a position a t the sister restaurant the Devonshire Fell where he was more front of house as a manager. Today this experience as a chef is a great


advantage, as the food he prepares is of the highest standard and he can also cater for small dinner parties, or canape parties either preparing each course, delivering it to the customer with instructions of how to cook, or cooking the whole meal and virtually presenting it at the table, what­ ever the customer requires.' He also makes fresh pasta dishes to take away from the store and cook at home, or will make a variety of dishes to order.

each of sea bass fillet, skinned and pin boned, then wrap them in Serrano ham. Escabesche marinade • 'A g of saffron • lOOml/lOOg of a good olive oil, prefer-:


ably’Tuscan or Umbrian 0 50ml/50g of a good dry crisp white


wine 9 30ml/30g freshly squeezed lemon juice 9 3 juniper berries, chopped or even


grated 9 2 pods of star anise, again grated if


possible 9 3 shallots, peeled and sliced thinly


9 V2 a carrot peeled and sliced thinly


into discs 9 salt and pepper


Method for cous cous 1. Add garlic puree to chicken stock and


bring to the boil, add salt and pepper and pour in the cous cous. Take off the heat and cling film. Leave for 4-5 minutes. Add the oregano and tomato. Check for season­ ing and add the olive oil. You may find that it needs a little more


liquid, for this you can add more of the chicken stock or a tomato sauce, a -vinai­ grette or anything up to the imagination, remember nothing is wrong in cooking it to your own interpretation.


To serve: Reheat ratatouille (last week’s


recipe) and fish if required. In a bowl spoon cous cous in a circle around the out­ side, then place the ratatouille in the mid­ dle. Finally place the fish on the top and drizzle over some of Elscabesche liquid.

ers, Owen Phillips, and is being per­ formed throughout the world-renowned


Fringe Festival. Telling the story of how war impacts


on a small Lancashire community and the relationships within it, “The War Bus” was premiered to glowing reviews at the Ribchester Festival of Music and Art earlier this year.
