The recipes featured in this issue are some of the best that senior living communities have to offer. They are healthy, flavorful, and easy to prepare. The recipes are also included in the issue because they are popular among residents. They are sure to please even the most discerning palate. With these recipes, senior living communities can provide their residents with the best dining experience possible. Poached Salmon on Ciabatta with Sweet Pea Coulis
POACHED SALMON INGREDIENTS: Fresh salmon Fish fumet
Bouquet garni (cheese cloth of aromatics parsley, thyme, bay leaves, peppercorns)
Sweet Pea Coulis ingredients: Blanched sweet peas Olive oil Shallots Garlic Thyme Sour cream, white pepper
Fish Fumet Instructions:
1. Roast any fish bones in oven to brown at 350 degrees for about 15 minutes.
2. Transfer browned bones to stock pot, add water and bay leaves.
3. Simmer until it reduces by 1/3. 4. Properly store and chill in refrigeration for 24 hours.
Poaching Liquid instructions:
1. Heat 1 gallon of the Fish Fumet, add 2 cups of white wine, 2 tablespoons of lemon zest, and then drop in the bouquet garni.
2. Heat to a boil then reduce heat to a lazy bubble.
3. Carefully drop in the raw salmon and braise for 5-7 minutes depending on the size of the salmon.
4. Use a spider spoon to remove the salmon; it should have light pink appearance with delicate texture.
Sweet Pea Coulis instructions: 1. Blend all ingredients thoroughly until smooth.
2. Transfer into plastic squeeze bottle and garnish the top of the salmon when plating.
To assemble:
1. Make an open-faced sandwich by placing sliced ciabatta on a plate.
