A typical breakfast includes eggs, refried beans, tortillas, plantains, tropical fruits, and coffee. Sauces made from chilies and tomatoes, called chirmol, are commonly served atop eggs or meats and various other dishes (12). Most meals center on the staples of corn, beans, rice, cheese, and corn tortillas (16). Common dishes include meat stews (caldos) as well as soups. Some popular dishes are dressed in special sauces, one being mole, a sauce made with ground chilies, nuts, and spices (12). Other popular sauces are pepian, a sauce made with ground chilies, sesame, and pumpkin seeds; and jocón, a green tomatillo and cilantro sauce thickened with ground sesame and pumpkin seeds.
