especially prevalent among immigrants with higher educational levels and increased duration of stay in the United States (37).
Chinese immigrants continue to cook their dinner in the traditional Chinese way by modifying the
ingredients that are available in the local market. Moreover, more Chinese ingredients, such as bean sprouts and bok choy, are widely available in US supermarkets today. Lunch is westernized to fast foods or sandwiches for the working class. In addition, there is an upward trend in the consumption of Western snacks. Generally, the consumption of high-fat meat, especially beef and chicken, is increased, whereas the consumption of fish and soy bean products is decreased because of availability and cost. Furthermore, the consumption of dairy products, fruit juices, and soft drinks is growing rapidly in these Chinese families. The fat intake of Chinese immigrants is found to be higher than fat intake in the traditional Chinese diet.
The longer the immigrants have stayed in the United States, the more adapted their food patterns are
to the western diet. Birthplace also influences immigrants’ food preference and nutrition intake. For example, people over age 65 from Hong Kong had the highest mean vitamin B6 intake, whereas older people from northern China had the highest folate and calcium intake (43).
One study showed that Asian Americans were three times more likely to report a prototypical
American food, with more calories and fat, as their favorite when their American identity was questioned or directly challenged (44). This may help explain why the diets of Asian Americans tend to decline in nutritional value the longer the residence in the United States and over generations.
According to a cross-sectional study of 423 Chinese immigrant women from October 2005 to April
2008, the socioeconomic status of middle-aged Chinese immigrant women is not associated with healthier diet patterns. Instead, higher socioeconomic status in this population is associated with having higher energy density and percentage of energy from fat, higher intakes of energy and sugar, and greater likelihood of consumption of sugar-sweetened beverages (45).
In a study on heart disease prevention among Chinese immigrants, 10% of the survey respondents
were current smokers, had a significantly lower educational level (p < 0.001), and were significantly more likely to have been born in China. Female and older immigrants were more likely to have had a recent blood pressure check. Survey respondents consumed an average of 3.6 servings of fruit/vegetables daily. Males and immigrants who had stayed in the United States for a longer duration of time consumed fewer fruit/vegetables. Younger individuals were significantly less likely to engage in physical activity than older individuals, and immigrants who had moved to the United States more recently were more physically active than those who had lived in the country for over 10 years (46).
Among the least acculturated parents, early life food insecurity was associated with the evaluation that
their children should weigh more; furthermore, a greater consumption of soda and sweets by those children has been observed. Among less acculturated parents, parental material deprivation was associated with more laissez-faire child feeding practices: less monitoring, less concern about the child’s weight or diet, and less perceived responsibility for the child’s diet (47).
A 2001 California Health Interview Survey revealed first-generation Asian adolescents had healthier
diets than Caucasians, as they consumed more fruits and vegetables and less soda. With succeeding generations, Asians’ fruit, vegetable, and soda consumption remained stable (48).
The prevalence of impaired fasting glucose (IFG) and type 2 diabetes in Chinese Americans is high.
The prevalence of IFG/diabetes was 38.3%, even among those with low BMI by Asian standards (<23.0 kg/m2), and showed a linear increasing trend with increasing waist circumference (49). The 2004 New York City Health and Nutrition Examination Survey (NYC HANES) showed that the age-adjusted prevalence of diabetes among Chinese Americans living in New York City was 8.6% and that of IFG was
