Juan Deventer (34), Head Chef of the recently refurbished restaurant at the Groot Phesantekraal wine farm in the Durbanville Wine Valley, says food’s always played a big role in his life. “Some of my earliest memories of food include my dad going crayfi sh-diving in Hermanus while my brother and I stood on the rocks looking out towards him in the ocean,” he says. WHICH VEGETABLES DO YOU THINK ARE UNDER- RATED?Courgettes. I love using them, from pickling them to using them in a batter for baby marrow and corn cakes. They’re very versatile. WHAT’S YOUR FOOD PHILOSOPHY?When I start working on a new menu, the fi rst thing I do is fi nd out what will be in season. That’s when you get the most amazing taste out of each product – which is more important to me than plating it up to look like a piece of art. The presentation is important, but if the food doesn’t taste great, the presentation’s useless. WHAT ARE YOUR FAVOURITE THREE DISHES ON YOUR CURRENT MENU?
