43 LIME AND ELDERFLOWER CRÈME FRAICHE ICE CREAM
This is a lovely fresh tasting alternative to egg based ice cream and super simple to make. If you want to, you can make your own elderflower cordial, but shop bought works just as well.
Ingredients 600ml full fat Crème Fraiche 175ml fresh lime juice, approx 6 limes 75ml elderflower cordial 300ml caster sugar Zest of 1 lime
Method Chill your ice cream machine bowl well in advance. Grate 1 lime on a sharp fine grater, we used a micro plane. Squeeze the juice from the limes into a large bowl. Add the rest of the ingredients, including the lime zest and mix well. Transfer into a jug. Set up and start the ice cream machine. Slowly pour the mix in and churn for approx 40 minutes, until the mix thickens. Transfer to a lidded tub and freeze over night. Ice cream is best stored at around -18 degrees.
