LAMB AND MINT LETTUCE CUPS

1 lb ground lamb 1 tsp ground cumin ½ tsp dried oregano ½ cup golden or regular raisins ½ cup nonfat Greek yogurt
2 tbsp finely minced mint leaves, plus more to garnish 2 heads Boston or Bibb lettuce 1 (8.8 oz) pkg Nature’s Promise® Precooked Brown Rice
in place of lamb

STEP 1 To a 12-inch skillet on medium, add the lamb, cumin, oregano, and raisins. Season with salt and pepper. Cook 7–10 min., until browned, breaking up meat with a wooden spoon. Drain off excess fat from meat. STEP 2 Meanwhile, in a small bowl, combine the yogurt and mint. Season with salt. Separate the lettuce leaves. Microwave the brown rice according to package directions. Add heated rice to cooked lamb. STEP 3 Assemble the lettuce cups by spooning lamb mixture onto each lettuce leaf. Dollop yogurt on top to serve.
