1 (2 lb) pkg chicken drumsticks 2 tbsp olive oil 1 (12 oz) pkg American-style salad blend or chopped romaine lettuce
¼ cup honey 2 tbsp apple cider vinegar ½ tsp crushed red pepper

STEP 1 Pat the chicken dry with paper towels and season with salt and pepper. In a 12-inch nonstick skillet, heat the oil on medium. Add chicken and cook 8 min., without moving. Flip chicken and cook 6–8 min. more, until browned on both sides and chicken reaches 165°F internal temperature, moving as little as possible. Meanwhile, add the salad blend to a large serving bowl. STEP 2 Transfer chicken to a plate when done. Remove skillet from heat and stir in the honey, vinegar, crushed red
pepper, and ¹/³ cup water, scraping up any bits from the pan. Season with salt and pepper. Pour half of the sauce over salad and toss to coat. Drizzle remaining sauce over chicken. Serve immediately.

AIR-FRIED FETA BITES WITH HONEY

Cooking spray 1 (8 oz) block feta cheese 1 large egg ¼ cup panko bread crumbs 2 tbsp sesame seeds
1 tbsp everything bagel seasoning 2 tbsp honey Pita chips or bagel chips, to serve (optional)
STEP 1 Preheat air fryer to 350°F. Cut a piece of parchment to fit into air fryer basket and coat with the cooking spray. Drain the feta cheese, if needed. Halve feta horizontally and cut each half into 8 bite-size cubes (for a total of 16 pieces). STEP 2 In a shallow bowl, beat the egg until smooth. To a separate shallow bowl, add the bread crumbs, sesame seeds, and everything bagel seasoning. Mix to combine. In batches, add feta cubes to egg mixture and toss to coat. Transfer to panko mixture and toss until fully coated. STEP 3 Place coated feta cubes in air fryer and lightly spray tops with cooking spray. Bake 8–10 min., until lightly browned. Remove from air fryer and transfer to a serving plate. Let cool 5 min., then drizzle the honey over top. Serve with the chips, if desired.
