SPAGHETTI SQUASH PIZZA
PREP TIME 5 MIN. – COOK TIME 40 MIN. READY IN 45 MIN. – SERVINGS 2
1 spaghetti squash 2–4 tsp olive oil salt and pepper 2 precooked poultry
sausages, sliced into thin wheels (optional) ¾–1 cup marinara sauce
½ cup part-skim shredded mozzarella 2 tbsp grated Parmesan Red pepper flakes (optional)
STEP 1 Preheat oven to 400°F. Microwave the spaghetti squash for about 3 min. to slightly soften (this makes it easier to slice). Cut in half lengthwise and remove seeds using a large spoon. Rub 1 to 2 tsp extra virgin olive oil on inside flesh of each half and sprinkle with salt and pepper. Lay both halves on baking sheet, cut side down. Bake until skin is softened (about 30 min. for medium squash). STEP 2 While squash cooks, prepare sausage, if using. Liberally mist a skillet with oil spray and warm over medium-high heat. Add sausage and sauté for a few minutes, searing all sides to slightly brown and deepen flavor. Turn off heat and set aside. STEP 3 When squash is ready, remove from oven. Flip them over so cut side is facing up, shred insides of squash using a fork, “fluffing” the interior to create spaghetti-like strands. Keep strands within squash shell, as this will be your serving “bowl.” STEP 4 Set oven to broil. Top each squash half (bowl) with ¼ cup marinara sauce and mix into strands. Stir in sausage. Cover with 2 tbsp sauce and heaping ¼ cup cheese. Sprinkle on grated Parmesan and optional crushed red pepper flakes. Place back in oven on top rack and broil for 1 min. or until cheese is melted with some charring (watch closely so it doesn’t burn!).
