SPIRAL HAM WITH MISO-PINEAPPLE GLAZE RECIPE PAGE 30
Tips to set up and serve
MAKE THE TABLE AN ISLAND: Leave space on all sides of the buffet table so people can serve from both sides and avoid a traffic jam. SEPARATE SLICES FROM THE HAM: Cut a few slices from the whole ham for guests to easily grab with one hand (a plate will be in their other hand). KEEP WARM SIDES WARM: Fill a large roasting pan or casserole dish with 1–2 inches very warm water. Place the dish of creamed peas or other warm sides like mashed potatoes in the larger dish. SERVE DESSERT ELSEWHERE: Instead of placing desserts on the buffet, serve from the dining, patio, or coffee table. No one will feel rushed to finish eating the main meal, and you won’t need to clear dishes mid-celebration.
