PASTA WITH BACON AND CREAMY CARROT SAUCE

½ (2.1 oz) pkg fully cooked bacon 1 lb carrots 1 (16 oz) pkg orecchiette
¼ cup grated Parmesan, plus more to garnish ¼ cup chopped dill, to garnish
STEP 1 Microwave the bacon according to package directions. Let cool slightly, then crumble. Meanwhile, bring a large pot of salted water to a boil on high. Peel and cut the carrots into 2-inch pieces. Add to pot and cook 10–12 min., until softened. Using a slotted spoon, transfer carrots to a blender. STEP 2 Return water to a boil over high heat. Add the orecchiette and cook 9–11 min., until al dente. Reserve 1 cup pasta cooking liquid. To blender with carrots, add pasta cooking liquid and the Parmesan. Season with salt and pepper. Purée until smooth. STEP 3 When pasta is cooked, drain well and return to pot. Toss with carrot sauce and season with salt and pepper. Top with crumbled bacon, dill, and more Parmesan.
