2 oz pork sausage 4 large eggs 1 tbsp butter


4 (8-inch) flour tortillas


½ cup shredded Cheddar cheese ¼ cup chunky salsa


STEP 1 Heat a 10-inch skillet on medium. Add sausage and cook until browned and cooked through, 4-5 min. Remove sausage from pan, discarding fat in pan. STEP 2 Whisk the eggs in a bowl. Melt 1 tbsp butter in pan over medium. Stir in the eggs and sausage and cook until the eggs are set, stirring often. Season to taste with salt and pepper. STEP 3 Warm tortillas according to package directions. Divide the egg mixture down the center of each tortilla. Divide the cheese and salsa among the tortillas. Fold the tortillas around the filling.
