25 Fish was local Beesands Mack-


erel as you have never enjoyed it before. Tart apple ‘linguine’, vibrant cucumber consommé, spiced tan- gerine gel, cucumber rolls encasing smooth mackerel pate; spiced crème fraiche – bursting with vivid colour, exquisite flavours, nothing jarred, everything pleased. The salt-smoke tang of


fermented garlic complimented our foie gras superbly which was roasted to perfection, the liver retaining its soft milky texture. A light Cauliflower and Winter Truffle velouté adding another layer of flavour, this dish made the complex appear effortless. And then the beef – ‘sublime’, Su’


declared, deservedly so given its wonderful buttery consistency and intense flavour. Sourced from so close it could have trotted its way to Mill Street, it arrived with both minimal (violet artichoke, crispy Jacob’s Ladder) and substantial (smoked mash, boeuf en croquette) adornments, nestling in the most delicious Jerez jus ever enjoyed. Pre-dessert was light, tart, sweet,


refreshing – delightful Passionfruit ‘Soup’ with Coconut Foam. Cool tongue-tingling lower layer topped with almost-there froth prepared


the way for Rhubarb and Custard Tart as only twenty_seven could serve it.


A filo pastry shell encasing a


favourite winter fruit resembled an exotic hothouse bloom, flavours matching the beauty of its pres- entation. To end, a divine apple tarte tatin,


delicately caramelised fruit holding its bite, topped with shavings of frozen blue cheese! We will both be trying this at home but with no expectations that our poor attempts can compare. Jamie has developed and


matured both as a Chef and restaurateur; there is an una- shamed confidence to his menus; the atmosphere, calm, relaxed,


somewhere diners understand and appreciate the ingenuity, expertise and effort required to create such elegance; service (by Anna), profes- sional and charming. It is the deserved home of Kingsbridge’s first ‘gold star’.
