BEETROOT FRITTATAS Serves 12


WHAT WILL YOUR BLEND BE?


250g pre-cooked beetroot, diced 600g butternut squash 1 tbsp coconut oil 8 large eggs 100g feta cheese 2 spring onions, chopped Large handful parsley 1 garlic clove, chopped Salt and pepper


1 Preheat oven to 200C/gas 6 and prepare a 12-hole muffi n tin with cases. Peel and cut the butternut squash into 3cm cubes. Roast in the oven with coconut oil for 15-20 mins, until soft.


2 While the squash is roasting, mix the eggs, sprinkled feta, spring onions, chopped parsley, garlic, salt and pepper in a large bowl. Leave the beetroot until last to avoid everything turning pink.


3 Roughly mash the roasted squash with a fork, keeping it chunky — do this in the roasting tin to save washing up — and add to the egg mix.


4 Pour your frittata mix into a large jug and pour into your prepared muffi n cases. Cook for 20 mins.

ROASTED CORN AND BEETROOT BOWL WITH A RASPBERRY VINAIGRETTE Serves 2


50g raspberries 1 raw beetroot 2 corn on the cobs 100g of mixed rocket salad 1 tbsp of avocado oil Half tsp of smoked paprika Juice of 1 lemon 1 tsp of freshly grated ginger 1 tbsp of apple cider vinegar 1 tbsp of olive oil 50g of toasted pumpkin seeds Salt and pepper


1 Heat a griddle pan to a medium heat.

2 Mix avocado oil, smoked paprika and a pinch of salt and freshly ground pepper in a bowl. Brush the spiced oil evenly over both


the corn on the cobs. Wrap them in foil and griddle them, rotating every few minutes for 20 mins, or until cooked. Unwrap the corn, let it cool, then use a knife to cut the corn away from the cob.


3 Put the raspberries in a pan with 2 tbsp water, lemon juice, grated ginger, apple cider vinegar and the olive oil and simmer over a low heat. Mash down the berries to form a purée and put this to the side to cool.


4 Grate the beetroot into a bowl with the rocket and mix with half the dressing. Sprinkle over the toasted corn, pumpkin seeds and top with the rest of the raspberry vinaigrette.
