Zucchini Muffi ns (Gluten-free Option)


Yields 3 dozen mini or 12 regular-sized muffi ns


1 cup oat fl our* 1/4 cup brown sugar


1/2 cup unsweetened cocoa powder 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup mini chocolate chips 2 eggs


1/2 cup plain Greek yogurt 1/4 cup maple syrup 1/3 cup unsweetened applesauce 1 teaspoon vanilla extract 1 cup grated zucchini


BOX


Preheat the oven to 350°F. In a medium bowl, combine the fl our, brown sugar, cocoa powder, baking powder, baking soda, salt and chocolate chips. Crack the eggs into a separate medium bowl and beat. Stir in the yogurt, syrup, apple- sauce, vanilla and zucchini and mix well. Add the dry ingredients to the wet ingre- dients. Stir until just combined. Spoon the mixture into a greased muffi n pan, fi lling the muffi n cups 3/4 of the way full. Bake for 12 to 15 minutes for mini muffi ns or 15 to 18 minutes for regular muffi ns, or until a toothpick inserted into the center comes out clean. Allow the muffi ns to cool in the pan for about 10 minutes before removing.


*Note: Make your own oat fl our by process- ing oats into a fi ne powder in a food processor or blender. To make gluten free muffi ns, make sure to use gluten free oats or gluten free oat fl our. (Oats are naturally gluten free, but are often processed in a plant that also processes wheat products.)
